For those already following a vegan diet, it can be especially hard to adapt to a low carb, high-fat diet. But once you know a few good substitutions, and have some amazing new vegan keto recipes under your belt, it doesn’t have to be difficult to eat well on a vegan keto diet. I’ve compiled 20 of my favorite plant-based keto recipes below to give you a head start!
I made this last night. I rarely comment on stuff but need to as I often use other people’s comments for inspiration! My partner enjoyed this and I thought it was okay. I halved the recipe, added a chopped serrano, and omitted the celery and chipotle and I think the latter was a mistake. I have some chipolte chili powder I could have subbed but forgot. So I felt like it was missing something in my version. Next time I would cut some of the walnuts in half, too.

Plate sizes have certainly changed over the years, increasing in diameter just like our waistlines. My weight loss has definitely slowed like it normally does after the first 2 weeks, but I also think I was getting a little too comfortable with my cheat days.  I let them happen more frequently than I should have.  So now, going into the month of February, I’ll be more diligent about not cheating unless it’s the right day, rather than just deciding on a whim to have a cheat day, just because I wanted what everyone else was having.  I’m going to be traveling to Breckenridge, Colorado for a ski trip this month, so I’m sure that the trip will be difficult on me.  At least, I’ll probably burn a lot of it while I’m skiing. #ketoacidosis
Hey Emma, I would definitely recommend consulting with your doctor and doing some more research on your own. However, keto isn’t high in protein, it’s high in fat and moderate in protein. So as long as you are keeping that protein intake moderate and fats higher, I don’t see why not. But again, talk with your doctor and definitely reach out to others who may have more experience in that area. Good luck!

In this study, each experiment that tested a sugar alcohol against glucose was collected and grouped in order to find an average consensus. Notice that glucose's glycemic index is 100, which makes for easy comparison (table sugar is about 63, for example). As an example of the comparison, look at the first line of the table. You can see that 4 studies compared erythritol with glucose, and the studies found that erythritol had a glycemic index response of zero, on average. This means that of all known studies up to 2003, erythritol did not cause any increase in blood sugar. Xylitol, however, did increase blood sugar, but only has a glycemic index of 13. It is clear that sugar alcohols have some effect on blood sugar, the extent to which is unclear.
So I was inspired to make this Vegan Keto Walnut Chili from a Marilyn Denis segment I did for heart health. Walnuts are such a heart healthy ingredient, since they have about twice as many antioxidants as other nuts, and they pack both monounsaturated fats and omega 3s. I was brainstorming yummy easy ways to incorporate them in a recipe that was more than just a sprinkle on top and this recipe came to me. When crushed really fine, walnuts actually have a similar texture as ground beef but without the saturated fat. According to Brian Wansink, Ph.D., a behavioral scientist and ‘mindless eating’ expert at the Cornell University Food and Brand Lab, people who fill their plate with everything they plan to eat (including dessert) eat about 14 percent less than those who don’t fill it as much but return for second helpings. So to eat less, load up your plate—but only once. To reduce your intake even more, use a smaller plate. Wansink found that subjects who served themselves using smaller dishes ate up to 60 percent less.
You've been faithful to a healthier eating plan and working out at the gym, and the number on the scale is even going down. You notice your clothes buttoning a little easier, less bloat to your belly and a slimmer appearance to your face. Whether other people notice these changes really depends on several factors, including their relationship with you and your starting size. You usually notice that you've lost weight far sooner than other people.

Several studies, for example, have shown that both vegetarians and vegans are prone to deficiencies in B12, calcium, iron, zinc, the long-chain fatty acids EPA & DHA, and fat-soluble vitamins like A, D, & K2. Vegans and vegetarians may also suffer from hormonal issues if their bodies aren’t producing enough cholesterol and if plant compounds called goitrogens are impairing their thyroid function.
Opt for low-carb and high-fat vegetables whenever possible. There's a range of low-carb fruit you can enjoy on your vegetarian ketogenic diet. You can also find a few high-fat examples with avocado being the most notable. Make sure to track your carb intake when making meals with these as it's easy to go overboard with carbs on a vegetarian ketogenic diet.
The research on vegetarian keto diets is limited, but anecdotally speaking, MacDowell says she noticed a handful of positive changes once she started following the diet. “I found that not only did I lose weight very quickly [though in a healthy amount of time], I also noticed things like joint pain was disappearing, my digestion was normalizing, little things that I didn’t at all expect,” MacDowell says.

You can usually be a little bit more loose on the dinners, since you have more time, although this will change based on your personal schedule. Meal planning should also help you to avoid going out to eat, although there’s almost zero way to do that on vegetarian keto anyhow. It’s not fun, but it gets the job done. In the vein of not being fun but getting the job done…
