I went on a vegan keto diet for about seven months last year. During that time I created quite a few recipes for the blog. I wanted to post a bunch of those Keto Vegan Recipes all in one place. That way those of you who have been on the diet for awhile as well as those of you who are starting a vegan keto diet for the New Year have a resource all in one place.
Look for your weight loss results after a few weeks of dieting and exercise, but be kind and patient with yourself. Each person's body is unique and the rate at which you lose weight may be different than it is for someone else. Stay consistent and remind yourself of the many benefits of reaching and maintaining a healthy weight so that you stay motivated for the duration of your journey.

If you pick up and experiment with different seasonings, you can create a lot of variety for yourself with the same foods. By way of example, the other day I made an egg scramble, but I added chili powder, cumin, and garlic to give it a southwestern feel.
So I was inspired to make this Vegan Keto Walnut Chili from a Marilyn Denis segment I did for heart health. Walnuts are such a heart healthy ingredient, since they have about twice as many antioxidants as other nuts, and they pack both monounsaturated fats and omega 3s. I was brainstorming yummy easy ways to incorporate them in a recipe that was more than just a sprinkle on top and this recipe came to me. When crushed really fine, walnuts actually have a similar texture as ground beef but without the saturated fat. It also makes this recipe for Vegan Keto Walnut Chili totally safe for my plant-based friends, yet CRAZY satiating across the board.
Ketogenic diets originated in the 1920s as a treatment for epilepsy, but they’ve since been credited for promoting a number of health benefits ranging from improved insulin sensitivity to everyday mental clarity, in addition to fast weight loss. Strict ketogenic—or “keto”—dieters limit carbohydrate intake to about 5% of their daily calories while keeping protein intake at around 20%. Fats, then, make up close to 75% of their calories. Although treats like chocolate, candy, and cookies may look beautiful on your countertop in clear glass jars, having them front and center will make them a constant temptation. "Keep [treats] in very inconvenient places — like in your garage or in hard-to-access areas of your kitchen," suggests Julie Upton, MS, RD, blogger at Appetite for Health. "If you keep them in your fridge or pantry, cover them with aluminum foil so you can't see the food and won't be as tempted by it."

My best advice for anyone who has been challenged with trying to loose weight is to invest the money in working with a personal trainer, because that will give you the jump start you need and trainers will push you like no one else will. Also, remember that healthy eating and exercise is a way of life and not a diet. You have to set goals for yourself and stick with them. Work out with a friend or make a new friend at the gym where you train because accountability is everything."

Making gluten free crackers is easy: substitute the wheat flour with almond flour and sunflower seed flower. You can buy almond flour almost everywhere now, but you will need to grind roasted and unsalted sunflower seeds in a coffee or spice grinder or use a food processor. Since the intake of meat and other animal by-products which constitutes the percentage of protein intake is a no go, you have to focus more on fat intake. You should, however, be mindful of the vegetables you take in. In order to source for proteins, vegetarians consume foods like legumes, grain sprouted bread, apples, bananas, oranges etc. which are high in carbs, and so extra caution is advised.

To get an idea of what that entails, consider that an average-sized person who eats about 2,000 calories a day will need 100–200g protein daily (on the lower end for strict keto dieters, and on the higher side for those going the Mod Keto route). A three-quarter cup serving of sunflower seeds nets you 25–30g protein, but also costs you 10g of carbs. Almonds have a similar protein-to-carb ratio at 30g to 15g per cup. The key is to accumulate enough protein from vegan sources without letting your carbs creep up too high.
Following the ovo-lacto vegetarians are the ovo vegetarians. In keto diets, and especially in vegetarian keto diets, eggs are a superfood. They have plenty of protein, lots of fat, and almost zero carbs! Meanwhile, milk, while often rich in fats, also has quite a bit of sugar in the form of lactose, which makes it not as keto-friendly. Cheeses, however, are a fantastic keto food that lacto vegetarians have access to.
Processed soy-based meat substitutes (such as Boca Burgers) and protein powders are major go-to’s for people transitioning to vegan diets, but they come with a catch. A 2016 position paper published by Virginia State University explains that soy contains isoflavones, a kind of plant estrogen that can act like the female hormone in humans. While typical serving sizes (one to three of soy foods, or less than 25g of soy protein from non-concentrated sources like tofu) have not been shown to be problematic, amounts more than that (totaling around 100mg isoflavones or greater daily) could negatively impact testosterone. To our thinking, why take the risk? It may be best for a keto dieter to get the majority of his/her protein from nuts, seeds, vegetables, and supplements and less from soy products, apart from the occasional slice of tofu.

To prove to yourself that you are making progress—even when your weight stays the same—Dulan recommends doing a jeans test. Find a pair you’re aiming to squeeze into, and see how your body feels in them. As you clean up your diet and clock more sweat sessions, you’ll likely notice a gap between your belly and jeans because your body is becoming leaner—even if that isn’t immediately obvious when you step on the scale. 
When you eat carbs, your body ingests them and converts them into an energy form that it's able to use - glucose. Glucose is at the top of the pecking order for your body to use for energy, if available. Insulin is the hormone that carries glucose around the bloodstream. The more carbs you eat, the more glucose your body produces, and the more insulin your body produces.
The scale isn't always the best marker of your results given that it doesn't tell you what type of weight you're losing -- water, lean tissue or fat. If you weight train as part of your weight-loss plan, you may actually acquire lean muscle mass, which may show up on the scale as a gain. You will notice that your clothes fit differently, and your appearance is slimmer and more taut, despite what the scale says. The results of weight training may be apparent in the first few weeks after you start the program, but visible results will slow down as your body becomes more accustomed to the routine.

Great question. Since a vegan diet is even more restricted in terms of low-carb foods, keto as a vegan is highly impractical and takes a lot more thought. However, you can still consume plenty of fats if you stick to healthy oils, nuts/nut butters, avocados, seeds/seed butters, and coconut as your sources while making sure you get enough protein too.
