A lot of this initial weight loss is water. Your fluid levels fluctuate often and can change dramatically when you alter your diet. For example, when you start a low-carbohydrate diet, you deplete the stored glycogen in your muscles. When you lose this glycogen, you also lose the water it retains. As a result of this loss of water weight, you may experience a flatter-feeling tummy and the first pounds lost on your scale. Lose just 2 cups of water, and it results in a pound lost on the scale, but it's not actual fat loss.

I have been following this for a week now.  I find that I can only do 2 of the meals a day and most of the recipes I cut in half.  It's a lot of food and I can't eat it all without feeling sick.  Other than that I think it really good.  I did cut the raw garlic out of the avocado and egg salad because the taste in my mouth is impossible to get rid of. 😊

According to a new Cornell University study, people who ate smaller, portion-controlled lunches consumed about 250 calories less per day (that’s about two pounds a month) than those who ate as much as they wanted. Portion control doesn’t mean you’ll go hungry. Reward yourself with a snack for sticking to smaller meals, which can help shave off pounds without major sacrifice.
In contrast to the typical, animal based keto diet with it’s high fat levels, a typical vegan diet often consists of a significant portion of grains and high calorie carbohydrates, often with a high carbohydrate to fat ratio. If we’re going to adapt a vegan diet to be keto friendly we need to really up our intake of a selection of higher fat vegetables etc. and cut down on carb heavy ones. Avocados and nuts are great sources of healthy fats to include along with nut and olive oils, and coconut (For more avocado recipes try this round up for some great ideas).
When using flax seed in your vegan diet, you can use them for anything from a breading on roasted vegetables, to making even a sweetened or savory porridge. I tipped the scale as a 238-pound diabetic in 2009, thanks to bouts of emotional eating. Vegans consume no animal products. Like vegetarians, they don’t eat meat, poultry, or fish, but they also avoid dairy, eggs, and other foods that contain even trace amounts of animal ingredients. Most vegans won’t eat gelatin (made from bones), casein (a milk protein), and fish oil supplements, or refined sugar (some brands of which use cow bones as a whitening agent).
Other intermittent fasting diets take a different approach. The 5:2 method, for example, requires you to eat as you normally would for five days a week, but on two nonconsecutive days, you eat just one meal a day. Wright says she spent five months conditioning her body to the 16:8 method. At that point, she says, she switched to the 20:4 method. According to this method, you fast for 20 hours and have a 4-hour eating window.
There was one person who I watched on youtube who was on a raw vegan keto diet who showed what she ate in a day. That might be the way to go if you want to avoid processed and cooked foods. For all I know it might be a good way to avoid the side effects of leg cramps because you are eating whole plant based foods and getting high quality nutrients.

Research in the August 2015 Obesity journal found that obese patients who drank 500 milliliters (a 16-ounce bottle) of water 30 minutes before eating lost almost 3 pounds more than those who did not. Even more promising is that those who pre-loaded with water before each of the three main meals lost an average of 10 pounds over a 12-week period (compared to a 2-pound weight loss for those who preloaded before just one meal, or not at all).

Red Palm Oil. Being an incredible source of Vitamins A and E, red palm oil doubles as a vitamin supplement. It has a mild carrot-like flavor and a rich, buttery texture. You’ll find that cooking with it can enhance the flavor of your vegan meat, nuts, and seeds. Caution: When buying palm oil, however, you must be extremely careful because many of these products are made in a way that devastates the wildlife and their environment. If you do want to add red palm oil to your keto diet, make sure you only buy RSPO-certified or Certified Sustainable Palm Oil (CSPO) products.
The bottom line? This way of eating is tough to stick with because it combines two restrictive diets. Mass believes the risks outweigh the benefits. But if you decide to try it, Mass cautions to approach the diet carefully, ideally under the guidance of a qualified registered dietitian who can help you pick your foods strategically and ensure you are supplementing the diet where needed. Mass also suggests reducing your carb intake gradually rather than going full-blown vegetarian keto overnight so you don’t completely shock your system.
Vegans have long known that they can’t get all the amino acids they need from one source of plant protein, so they make an effort to eat a diverse selection of them and often combine foods in the same meal to get a complimentary assortment of aminos. You don’t need to do this at every meal—your body can hold on to the aminos from one food a few hours until you eat another food with aminos that complement them and form a complete protein. But don’t get in the habit of basing your meals around only tofu or only hemp. Eat as broad a menu as you can to ensure the richest nutritional intake you can. I’ve also heard some of my vegan friends say that they’re going to give a keto lifestyle a try to help them lose weight. Personally, Travis and I don’t follow a vegan keto diet, we just live a very simple and easy vegan lifestyle and eat whatever we want (within reason). However, I wanted to put together a list of vegan keto recipes to help anyone thinking about trying a keto diet this year.
But that doesn't mean it's going to be easy. Because, at their core, a typical vegetarian diet and a traditional keto diet contradict one another. "The essence of a vegetarian diet is healthful carbohydrates, and keto diets are very low in carbs," says Sharon Palmer, R.D.N. And depending how strict a vegetarian diet you follow, you most likely avoid all meats, poultry, and fish—the main sources of protein recommended in a typical ketogenic diet, adds Sheth. Not to mention that many plant-based protein sources, such as beans and lentils, are high in carbs—so they'd be a no-go on a vegetarian keto diet plan.
Fat is important on the keto diet, but especially so if you are vegan or vegetarian. “Aim to get 75 percent or more of your calories from plant-based fats like coconut oil, coconut cream/butter, MCT oil, olive oil, avocado, and—in lesser amounts—nuts and seeds,” says Dr. Axe. “Keep nut and seed consumption to about 1/4 cup per day (or two tablespoons of nut butter), since these do provide some carbs and can also be hard to digest in large amounts.” To help with absorption of minerals, he recommends soaking or sprouting nuts first.
I think if you halved or quartered the higher net carbs mirepoix components and remember this makes 6 servings, this could be keto adapted. I just wonder if the flavor will get lost. I am trying to stay below 19g of net carbs per day. I will try this, doing everything it takes to keep a serving under 9g and report back. I love the idea of it and it does seem like it would be delicious. Always looking for one pot meals to plan lunches for the week.

And speaking of working out, if you’re a gym rat or avid runner, prepare for your workouts to suck for a while until your body fully adapts to the diet. If you’re cutting out carbs for the first time, your body will need two weeks or more (and sometimes months) to fully support the demands of exercise with ketones. And if you’ve been relying on animal products, you may find it difficult to recover without the full array of amino acids that every serving of animal protein provides.
