I’ll admit I’m much more of a savory breakfast person. I love getting the day off to a great start with a delicious, filling recipe. This avocado is one of my absolute favorites. I’ll eat it practically any time of day and for any meal or snack. It’s got a great combination of tanginess from the balsamic, savory smoky, salty bacon flavor and the rich, smooth and satisfying avocado. “The original keto diet is extremely high in fatty meats, which is not good for our cardiovascular system,” says Melissa Bailey, RD, creator of the Nourished Fork. “The vegetarian version eliminates these meats and allows for more plant-based options, such as avocado and nuts and seeds. In general, the population is going towards a more plant-based, whole-foods diet, which is why the ketotarian diet is emerging.”

Starchy veggies, such as potatoes and corn, are carb-heavy, which is a no-no on the keto diet. Still, as a vegetarian, you’re likely going to consume veggies for every meal. Aim for variety. Include leafy greens, broccoli, cauliflower, peppers, mushrooms, onions, asparagus, etc. “Sea vegetables are also great additions to your diet since they provide iodine and other key minerals,” says Dr. Axe. “For help with digestion and gut health, also try to include fermented veggies in your diet every day, such as kimchi, sauerkraut, etc.”
Still, Mass is hesitant to recommend this way of eating. “I don’t see many benefits to going keto vegetarian,” she says. The major concern is nutritional deficiencies. As Medline Plus notes, vegetarians already are at risk of being deficient in vitamin B12, vitamin D, zinc, iron, calcium, omega-3 fatty acids, and protein. Keto then puts more restrictions in place, further increasing the likelihood of being deficient in some of these nutrients. For example, breakfast cereals, which are usually rich in vitamin B12, are not allowed on keto.
I made this last night. I rarely comment on stuff but need to as I often use other people’s comments for inspiration! My partner enjoyed this and I thought it was okay. I halved the recipe, added a chopped serrano, and omitted the celery and chipotle and I think the latter was a mistake. I have some chipolte chili powder I could have subbed but forgot. So I felt like it was missing something in my version. Next time I would cut some of the walnuts in half, too.

Some do, and some don't. Similarly to sugar alcohols, different sweeteners have different glycemic indexes. Start with a very low number of carbs and slowly add more. For this method, start by eating a maximum of 15g net carbs per day. This is a very, very low number of carbs, even for most on keto. As you enter ketosis, you can slowly start adding more net carbs to see where your body's limit is. Once you eat a certain number of net carbs that causes you to exit ketosis, then you know what your net carb limit is!

Unfortunately, it is almost exclusively comes from animal products, so vegetarians might not get as much of it as they need. Vegans definitely will not. Interestingly, vitamin B12 is actually made by animals’ gut bacteria, so you can find vegan-friendly sources. Also interestingly, your body can store B12 for as long as 3 to 5 years before you become deficient, so it may take a while before symptoms show up.
