It only took a year and a half for my weight to climb up 30 pounds and my body to become unrecognizable. This happened from a stressful job, late night eating and chocolate had become my best friend. You may have noticed that glycerin and HSH are both absent from this chart. In one 1990 study, researchers found that HSH corresponded to a glycemic increase that was 71% as strong as pure glucose. Often a vegetarian diet is perceived as one packed with carbohydrates and twinned with the struggle of eating enough protein, so it’s normal that some vegetarians may feel trepidation when encountering the ketogenic approach to nutrition. Is it possible to enter a state of ketosis and get the same results on a vegetarian keto diet as someone on an omnivorous diet? The answer is yes — especially if you’re still consuming some animal-sourced products as a lacto-ovo vegetarian.
Reading ingredient labels is also important. You should know what’s in the food that you put into your body! Those following a vegan or vegetarian diet are used to checking ingredient labels to make sure that they’re not unknowingly consuming an animal product or byproduct. When on the keto diet, you have to look out for food that contains sugar and flours. They can interfere with ketosis. “Don’t consume any added sugar from desserts, juice or soft drinks, grains, beans or legumes. A study published in The International Journal of Obesity studied 420 overweight and obese adults and found those who ate their major meal after 3 p.m. — lunch for this Spanish cohort — lost less weight than those who ate earlier in the day despite similar calorie consumption and activity levels. Scheer, who co-authored the paper with professors Marta Garaulet, believes diet-induced thermogenesis, the increased energy expenditure after food intake, could be the reason for the results.

In one study, eating a high-fiber, higher protein dinner (30% of total calories from fiber and 17% of total calories from protein) and less saturated fat helped adults fall asleep faster than those who ate meals that were lower in fiber and higher in saturated fat and sugar. The researchers found eating a high-fiber, higher protein meal was also associated with more time in slow wave, deep sleep, which is essential for memory consolidation and immune function. Eating more saturated fat, in contrast, led to less restful sleep and more nighttime arousals.
“You will likely lose weight on this diet, and if that’s your only goal, then great,” says Bailey. “However, this diet is extremely hard to achieve and maintain. It eliminates a lot of really beneficial foods, such as whole grains and starchy vegetables. Based on a 2,000-calorie-per-day diet, one would need to consume 165 grams of fat, 25 grams of carbs, and 100 grams of protein. This is unrealistic and also very unhealthy for our bodies,” she says.

As far as calories are concerned, you will come to find that many of the high-carb foods you are cutting out were the same foods that contributed so many calories to your diet. A restriction in food groups naturally leads to a reduction in calories. Ketosis also suppresses appetite, however, so you really need to make sure you're bringing in enough calories to keep your body happy and healthy.
These omega-3 fats provide building blocks for cellular structures throughout the body and aid in the prevention of cardiovascular disease. Fish oil is the most common source of DHA and EPA, but a good vegan source—and one that, arguably, offers a better concentration of DHA—is algae (which is where those oily fish get their omega-3s from anyway). By supplementing with algae oil, you’re effectively cutting out the middle-fish. Aim for about 300mg/day.
“If you look at people who lose a lot of weight through diet alone and compare them to those who do it through diet and exercise, the latter group has better gains,” Sharp says. “That’s because exercise increases lean tissue mass, preserves your metabolism, increases energy, reduces stress and decreases cortisol, which we know is key to weight loss.”
There are a lot of you out there who hate on Tofu, and all soy products for that matter, but we are tofu advocates! Tofu is not only high in protein, and relatively high in fat, but it's low in carbs, which makes for a great protein source on a ketogenic diet. It's a good source of essential vitamins, such as magnesium, calcium and iron and absorbs flavors really well so whether or not you're a great cook, cooking with tofu is cooking made easy!

One thing to note, however, is the varying carb count in different cheeses. It ranges from a low .10 net carbs per 1 oz serving of Gruyere cheese to a higher 1.5 net carbs per 1 oz serving of Swiss cheese.

Fruit can also be incorporated into your meal plan, but you have to be selective as the fructose content in a lot of fruit can easily tip you over your daily carbohydrate ration and kick you out of ketosis.
