Hey Emma, I would definitely recommend consulting with your doctor and doing some more research on your own. However, keto isn’t high in protein, it’s high in fat and moderate in protein. So as long as you are keeping that protein intake moderate and fats higher, I don’t see why not. But again, talk with your doctor and definitely reach out to others who may have more experience in that area. Good luck!

Heat a non stick pan over medium high heat and add 5 tsp of ghee to it. When the ghee becomes hot, roll the spinach leaves in the dry mixture to coat the leaves and start putting them in the hot ghee. Cover the pain with a lid and cook for 5 minutes. I am brand new to this concept! I just downloaded the app and transferred the vegetarian 2-week plan into my app settings. (Great app btw!). I noticed that the net carbs are really low. For example, day one is 10.3 for the day. I set a goal of ~20 based on what I am learning from app. Should I be concerned? I meet the calories for the day by not the protein or net carb goal.  Hope I am making sense!

Rachel Beller, M.S., R.D., and nutritionist on NBC's The Biggest Loser, calls for a "reality check" when it comes to reading serving sizes on packaging. "Many cereals have a serving size of half a cup or two-thirds of a cup, but no one sticks to a measly half a cup of cereal." She suggests limiting yourself to single-cup servings that don't exceed 200 calories. Make measuring cups your new BFFs, and resist the temptation to let em overflow.

Using a flax seed egg is the perfect vegan substitution when a recipe calls for an egg. Simply combine 1 tablespoon of ground flax seed meal with 3 tablespoons of water and let sit at room temperature for a least 15 minutes. For every egg a recipe calls for, you will need to use this ratio, so if you need 3 eggs, use 3 tablespoons of flax meal and 9 tablespoons of water.

Reading ingredient labels is also important. You should know what’s in the food that you put into your body! Those following a vegan or vegetarian diet are used to checking ingredient labels to make sure that they’re not unknowingly consuming an animal product or byproduct. When on the keto diet, you have to look out for food that contains sugar and flours. They can interfere with ketosis. “Don’t consume any added sugar from desserts, juice or soft drinks, grains, beans or legumes. These should be avoided or [eaten] in very small amounts.”

That amount of weight loss will be very noticeable and can change her clothing size up to two sizes. Regardless of whether or not you can process gluten, seitan is very high in carbs. I don’t touch it. Also, beans or any fruit other than a few berries. Certainly not a tennis ball worth of fruit and under no circumstances a hockey puck worth of carbs!! Also, if it weren’t for heavy whipping cream, cream cheese and butter, I’d have a terrible time getting the fat and calories I need, so 2 dice worth is no dice. If I followed this advice I would never be in ketosis. I think the author needs more experience.

So I was inspired to make this Vegan Keto Walnut Chili from a Marilyn Denis segment I did for heart health. Walnuts are such a heart healthy ingredient, since they have about twice as many antioxidants as other nuts, and they pack both monounsaturated fats and omega 3s. I was brainstorming yummy easy ways to incorporate them in a recipe that was more than just a sprinkle on top and this recipe came to me. When crushed really fine, walnuts actually have a similar texture as ground beef but without the saturated fat. It also makes this recipe for Vegan Keto Walnut Chili totally safe for my plant-based friends, yet CRAZY satiating across the board.

You might be wondering why we calculate net carbs instead of total carbs. The reason is simply because our bodies don't transform fiber into sugar the way they do for other carbs. In actuality, some keto experts say that even having too many carbs from fiber can knock you out of ketosis. In order to get around the carb rules, some companies make keto food using sugar alcohols, which don't fall under the sugar or the dietary fiber categories.
I made this last night. I rarely comment on stuff but need to as I often use other people’s comments for inspiration! My partner enjoyed this and I thought it was okay. I halved the recipe, added a chopped serrano, and omitted the celery and chipotle and I think the latter was a mistake. I have some chipolte chili powder I could have subbed but forgot. So I felt like it was missing something in my version. Next time I would cut some of the walnuts in half, too.

Tofu and meat substitutes - Soy products are a bit controversial in the keto community. Some dieters claim that phytoestrogens and antinutrients in soy could have a negative effect on health and nutrition. On the other hand, soy is a rare plant source of all essential amino acids, making it a valuable vegan-friendly food. While soy milk may be high in carbs, tofu only has around 2 grams net carbs in a 7 oz. serving.
The weight loss did slow down but I know if I throw a splurge day in it'll kick start my metabolism. I've been trying to get in shape for over 15 years and this diet is the best thing I've found in that time. What I have learned from all the trial and error is throwing a splurge day in to shake things up. I'll report back after I go back to keto tomorrow. 😊 I've also figured out along the way this journey that the digestive system is a very important aspect to losing weight. Before I found this diet I spent the last 6 months or so on a high fiber diet and drinking tons of kefir.
