Meat is a cornerstone of the ketogenic diet, but that doesn’t mean the diet is off-limits for the vegetarian population. As the high-fat, low-carb approach has grown in popularity, many vegetarians have wanted in on the hype and have found a way to make it work for them, tweaking the typical keto diet menu and food list to fit within their meat-free lifestyles.
When you eat carbs, your body ingests them and converts them into an energy form that it's able to use - glucose. Glucose is at the top of the pecking order for your body to use for energy, if available. Insulin is the hormone that carries glucose around the bloodstream. The more carbs you eat, the more glucose your body produces, and the more insulin your body produces.
The diet of the moment is the ketogenic plan—people turn to it to lose weight, to manage chronic illness, or to find a healthier lifestyle. This high-protein plan focuses on meat, however. The goal is to eliminate carbs, jack up the protein, and force the body to burn fat for fuel (instead of its preferred source: carbohydrates). This phenomenon is called ketosis—but the meat focus prevents vegetarians from experimenting with the plan. Still, Mass is hesitant to endorse this way of consuming. “I don’t see many blessings to going keto vegetarian,” she says. The main challenge is dietary deficiencies. As Medline Plus notes, vegetarians already are liable to being deficient in vitamin B12, vitamin D, zinc, iron, calcium, omega-3 fatty acids, and protein. Keto then puts extra regulations in vicinity, further growing the probability of being deficient in a number of those vitamins. For instance, breakfast cereals, which are commonly rich in vitamin B12, aren’t allowed on keto.
“You will likely lose weight on this diet, and if that’s your only goal, then great,” says Bailey. “However, this diet is extremely hard to achieve and maintain. It eliminates a lot of really beneficial foods, such as whole grains and starchy vegetables. Based on a 2,000-calorie-per-day diet, one would need to consume 165 grams of fat, 25 grams of carbs, and 100 grams of protein. This is unrealistic and also very unhealthy for our bodies,” she says.
By eating the foods on the “Do Eat” list, you will be able to follow a vegan ketogenic diet and cover most of your nutritional bases. At first, however, it may be difficult to adapt to this new lifestyle with all of the low-carb and keto recipes that contain animal products. Luckily, there are some simple substitutions you can make that will allow you to “veganize” almost every keto recipe.
“Understand that it is a marathon, not a sprint. Some days may not be great but don’t beat yourself up. Also understand what works for you—maybe only for you. Tracking my food and running have been my unlock, but everyone must figure out what’s best for them. It could be meal prep, cutting out certain foods, doing more cross training... Whatever it is, do what you can practically manage, and also enjoy.”
Ketogenic diets originated in the 1920s as a treatment for epilepsy, but they’ve since been credited for promoting a number of health benefits ranging from improved insulin sensitivity to everyday mental clarity, in addition to fast weight loss. Strict ketogenic—or “keto”—dieters limit carbohydrate intake to about 5% of their daily calories while keeping protein intake at around 20%. Fats, then, make up close to 75% of their calories. In this study, each experiment that tested a sugar alcohol against glucose was collected and grouped in order to find an average consensus. Notice that glucose's glycemic index is 100, which makes for easy comparison (table sugar is about 63, for example). As an example of the comparison, look at the first line of the table. You can see that 4 studies compared erythritol with glucose, and the studies found that erythritol had a glycemic index response of zero, on average. This means that of all known studies up to 2003, erythritol did not cause any increase in blood sugar. Xylitol, however, did increase blood sugar, but only has a glycemic index of 13. It is clear that sugar alcohols have some effect on blood sugar, the extent to which is unclear.

Protein is likewise a large challenge. “Since the keto weight loss program is counting on protein and fats for your calorie consumption, you are slicing out many of the entire proteins you would be achieving — say from legumes and grains — on a normal vegetarian food plan,” Mass says. “On a keto weight-reduction plan, this supply of whole proteins is now basically eliminated.” Protein is critical to help the frame build bones, muscle tissues, and pores and skin, in line with Medline Plus.
There was one person who I watched on youtube who was on a raw vegan keto diet who showed what she ate in a day. That might be the way to go if you want to avoid processed and cooked foods. For all I know it might be a good way to avoid the side effects of leg cramps because you are eating whole plant based foods and getting high quality nutrients.
The Wisconsin native also struggled with health issues. In her early teens she was diagnosed with polycystic ovarian syndrome (PCOS) and sleep apnea. “It is extremely difficult to lose weight and maintain weight loss with PCOS,” says Stolfi, who hit her highest weight of 286 lbs. at age 18. “And the lack of good sleep caused me to be lethargic, which meant I didn’t have the energy to work out.”
Research suggests that weight loss is impacted by when we eat as much as by what we eat, which means intermittent fasting may help spur metabolism. There are several different methods for intermittent fasting, some of which are more restrictive than others. Wright recommends starting out with a less restrictive regime until your body is accustomed to it.
A better alternative is to eat before going out, bring your own meals to work, or suggest local restaurants that you know have options for you. In order to avoid being super awkward, don’t stuff yourself before you go out, just eat enough to feel fulfilled, then you can order some side dishes/vegetables/salad or a single veggie burger without the bun. Most places are starting to adapt to the veg crowd, so you should be able to find at least something to nibble on, but always have a list of good places ready that you can defer to if asked. Indian restaurants are great for veg keto, same for Middle Eastern restaurants.
Keep in mind that I do not have a nutrition calculator plugin on my blog, which I wouldn’t trust anyway. When I was counting macronutrients I noticed that I would get different numbers depending upon the brand of an ingredient that I used. When you are trying to keep carbs down to 20 grams per day, the slightest difference in brands can make a huge difference.

According to Brian Wansink, Ph.D., a behavioral scientist and ‘mindless eating’ expert at the Cornell University Food and Brand Lab, people who fill their plate with everything they plan to eat (including dessert) eat about 14 percent less than those who don’t fill it as much but return for second helpings. So to eat less, load up your plate—but only once. To reduce your intake even more, use a smaller plate. Wansink found that subjects who served themselves using smaller dishes ate up to 60 percent less.
Carbohydrate restriction can lead to quick water loss. When you lose water weight, you are likely to feel and look thinner. For some people, lost water weight can make the difference between two different clothing sizes. But losing water weight is different than losing fat. While cutting back on carbs is a smart approach to weight loss for many dieters, it needs to be part of a comprehensive program of healthy eating for sustained weight loss to occur.

My weight loss has definitely slowed like it normally does after the first 2 weeks, but I also think I was getting a little too comfortable with my cheat days.  I let them happen more frequently than I should have.  So now, going into the month of February, I’ll be more diligent about not cheating unless it’s the right day, rather than just deciding on a whim to have a cheat day, just because I wanted what everyone else was having.  I’m going to be traveling to Breckenridge, Colorado for a ski trip this month, so I’m sure that the trip will be difficult on me.  At least, I’ll probably burn a lot of it while I’m skiing. #ketoacidosis
