It only took a year and a half for my weight to climb up 30 pounds and my body to become unrecognizable. This happened from a stressful job, late night eating and chocolate had become my best friend. I realize now I ate a LOT of chocolate!! That added up to a sugar addiction, mood swings and weight gain. Yuck! I looked and felt dumpy. I looked and felt OLD and UGLY and my clothes kept getting tighter and tighter. Every time I looked into the mirror I hated what I had become. I loathed myself and how I looked. I had no clue how to get out of this "ever expanding woman" syndrome and I felt a bit more hopeless - not good. I'd seen Samantha's ads and the photos always caught my attention. I knew I needed help to get myself back. I knew I needed to be educated about what, when and how to eat. Also I like the concept of accountability. I like having a well defined plan and having someone mentor me through that plan. I must experience success or I will lose interest and give up. Samantha's ads and testimony on her web site gave me the belief that I would experience success with her.I set very high standards for myself and Samantha set them higher. When I turned 56 in August a week later I called Samantha for an interview. I did not like being asked how I was going to change my life so that I could succeed at her program but I knew I would do whatever I needed to do to get myself back. And I knew that Samantha had the knowledge, skills, talent to assist me on that journey. Her program was absolutely what I needed. Samantha is the most determined person I have ever met. I made my commitment not only to her but to myself as well. I can honestly say it was NOT difficult but it took determination, patience and consistent dedication. I did NOT feel deprived; I felt empowered and that is VERY important to me! I understood the mistakes I made in portion sizes and the timing of my meals. Being free of my cravings for chocolate within 1 week was amazing! And I lost 26" in the first 4 weeks. Wahoo!
Many dieters think that being ‘good’ during the week gives them a license to let go on the weekends, but if you add it up, eating poorly and not exercising Friday to Sunday comes out to 12 days “off” a month! Instead of letting the days of the week influence your habits, focus on creating a healthy lifestyle that is sustainable all month long (with the occasional indulgence) for lasting weight loss.
I want to be totally honest about what I experienced on a vegan keto diet so that you know what you are getting into. My intention is not to turn anyone away from the diet, just be transparent about my experience with it. I would do a lot of research before starting it so that you know what you are getting into and how to maintain it without any symptoms.
Opting for high-fat plant foods like avocados, coconuts, and nut butters is one way to meet your keto macros on a vegetarian ketogenic diet. Making sure you're eating high-quality protein is also important. But one of the biggest concerns on a vegetarian ketogenic diet is omega-3 fatty acids intake. These essential nutrients are difficult to obtain on plant-based diets, so make sure to eat foods rich in this fatty acid or go for supplements.
According to nutritionist Isabel Smith, MS, RD, CDN, the ketogenic diet "is basically low-carb, high-fat, and moderate protein." Generally, it consists of 70% fat, 20% protein, and 10% carbohydrates. The goal of this diet is to put the body in a state of ketosis, which means you're body burns fat as its main energy source—not carbs or protein. People say it could aid in healthy weight loss, decrease inflammation, and more. But what many people don't know is if it can pair with a vegetarian lifestyle since it so strictly emphasizes fat and protein over carbohydrate consumption. It's no secret that many followers of the keto diet load up on meat and fish, which makes the diet seem rather murky and unapproachable for vegetarians.
This healthy chocolate chip cookie recipe has a texture that's almost comparable to shortbread! The recipe only requires 7 ingredients and stays vegan by avoiding eggs and butter. Using almond flour for the keto cookie dough keeps the texture buttery and light. This is a great choice if you're looking for an easy keto cookie that reminds you of a classic chocolate chip cookie recipe.
By eating the foods on the “Do Eat” list, you will be able to follow a vegan ketogenic diet and cover most of your nutritional bases. At first, however, it may be difficult to adapt to this new lifestyle with all of the low-carb and keto recipes that contain animal products. Luckily, there are some simple substitutions you can make that will allow you to “veganize” almost every keto recipe. #keto pancakes

Start with a very low number of carbs and slowly add more. For this method, start by eating a maximum of 15g net carbs per day. This is a very, very low number of carbs, even for most on keto. As you enter ketosis, you can slowly start adding more net carbs to see where your body's limit is. Once you eat a certain number of net carbs that causes you to exit ketosis, then you know what your net carb limit is!

Although it’s just recently entered the limelight in the past few years, the ketogenic diet actually has a pretty extensive history that stretches back for centuries. Since at least 500 B.C., fasting has been used as a natural method to treat epilepsy. In the 1920s, the ketogenic diet was developed as a way to mimic the effects of fasting and aid in the treatment of seizures in children. (1)
I wasn't athletic at all, but I knew I was able to walk, so I thought I'd try that for two weeks to see if I liked it. I went walking for three miles around my office building with friends on my lunch break and enjoyed it, so I kept at it. My legs got stronger and over time, I could keep up with the group. All of my blood work is now normal, and I have more energy for my 12-year-old daughter. The personality that I had inside has finally come out. I used to feel invisible, but now, when I put on my suit and heels, I think, I can command this room.
Another trick to encourage mindful eating is to focus on the taste of food instead of the activity you're doing while eating (like staring at a TV screen or reading emails). "Cultivate [your] taste buds by focusing on the first three to six bites of food," says Chere Bork, MS, RD, a speaker and wellness coach in Minneapolis. "Taste buds are chemical sensors that get tired very quickly, so unless you're very hungry, the first few bites of a food will taste better than the next few bites. After a larger amount, you may actually have very little taste experience left." By savoring the early bites, especially when it comes to rich foods like chocolate and cheese, you will satisfy hunger and cravings without eating large portions.
Add a few drops of oil to your hands and spread the dough onto a piece of parchment paper. Place another piece of parchment paper on top and use a rolling pin to flatten the dough into a large rectangle. When the dough is about 80% spread, sprinkle the everything bagel seasoning on top and continue to roll out the dough until it takes up the entire width of parchment paper, the thinner the better.

MCT Oil. This oil is commonly derived from coconut oil and palm oil. It contains medium chain triglycerides, which are saturated fatty acids that skip normal fat digestion and go right to the liver where they are converted into ketones for fuel. Add it to your salad dressings, sauces, smoothies, fat bombs, and hot drinks like coffee or tea for a potent energy boost.
Yes, you read that right. A vegetarian keto diet means you can load up on the cheese. Freshly sliced mozzarella is packed with protein and fat, making it a perfect accessory for a vegetarian keto diet. Simply top vegetables like portobello mushrooms, eggplant rounds, or zucchini noodles with mozzarella and/or grated Parmesan for an instant protein boost. If you want a cheesy snack that is anything but cheesy, a buffalo chicken dip – sans the chicken – is a delightful keto diet food that pairs perfectly with celery or carrots and fits nicely with a vegetarian lifestyle. This eggplant lasagna loaded with creamy ricotta cheese is perfect for any Italian lover. Just remove the sausage.

As far as calories are concerned, you will come to find that many of the high-carb foods you are cutting out were the same foods that contributed so many calories to your diet. A restriction in food groups naturally leads to a reduction in calories. Ketosis also suppresses appetite, however, so you really need to make sure you're bringing in enough calories to keep your body happy and healthy.
Blue Diamond nut varieties - Blue Diamond nuts are notoriously low in carbs. Their typical salted almonds only have 2g net carbs per 24 nuts! Even their dark chocolate almonds only have 6g net carbs per serving. They have tons of other flavors as well, which makes for awesome variety in your snacking (a big problem for keto-goers) - you won’t get bored of this stuff.
The goal of a traditional keto diet is to speed up weight loss through fat burning. It's done by following a meal plan that's high in fat, very low in carbs, and moderate in terms of protein, says Vandana Sheth, R.D.N., spokesperson for the Academy of Nutrition and Dietetics. Those ratios mean your diet should break down to approximately 80 percent fat, less than 5 percent carbs, and 15 to 20 percent protein.

“After having a baby, I just couldn’t get the weight off. I was eating out a lot and had developed some bad eating habits. My husband and I trained with Samantha and it’s been really fun. We’ve learned how to workout, how to eat healthy and enjoy it! I lost 5" on my waist, over 20 lbs. of fat and over 20" and my husband lost 5" on his waist and over 20 lbs.!
You don't ignore the calories in a giant muffin, but that specialty coffee may not always get the same consideration. Solid foods aren't the only hiding place for weight-gain culprits—liquids are diet derailers too. "A 20-ounce nonfat latte contains 200 calories, but the same size coffee with a splash of nonfat milk or soy milk has 25," Beller says. If you're still skeptical that drinks are wreaking havoc on your daily calorie allowance, journal them and you might be surprised.
Vitamin B12 - B12 is a vitamin required for red blood cell formation, neurological function, and DNA synthesis, so it is pretty important. Unfortunately, it is almost exclusively comes from animal products, so vegetarians might not get as much of it as they need. Vegans definitely will not. Interestingly, vitamin B12 is actually made by animals’ gut bacteria, so you can find vegan-friendly sources. Also interestingly, your body can store B12 for as long as 3 to 5 years before you become deficient, so it may take a while before symptoms show up.
In Minneapolis, Minnesota, a survey revealed that 94 percent of residents would be willing to buy more fresh produce if it were stocked at local corner stores. In response to this, the city launched the Minneapolis Healthy Corner Store Program that requires convenience stores to stock fresh produce. This trend might be spreading to other areas in the coming years
If you follow these steps but don’t feel your best, you may benefit from paying attention to which nutrients you could be deficient in. Click on the button below to see the appendix on specific nutrients that can be an issue for keto vegetarians. But remember that if you feel good and are eating a range of nutrient-dense foods, you probably don’t need to worry about specific micronutrients. Simple does the trick!
Vegetable-sourced iron, known as non-heme iron, is harder to absorb than heme iron, which is found in animal products. This is why iron levels can plummet even when a plant-based dieter eats iron-rich foods like Swiss chard, nuts, and seeds. It’s wise, then, for vegan keto eaters to add a vegan-based iron supplement to their diets. This goes double for women, who lose some iron every month through menstruation. For women 19–50, 18mg of iron per day is recommended.
Most of the studies about ACV have been done on animals—or in really small groups of people, explains Eliza Whetzel-Savage, R.D., a registered dietitian at Middleburg Nutrition in New York City. “There is one study of people that showed ACV may slow digestion of food and liquid, which may help stabilize blood sugar,” she says. “But overall, there is not much science to support many of the claims.”
You’ve heard that eating from smaller plates can help you eat less, but did you know that using a larger fork can do the same? A recent study by researchers at the University of Utah found that participants eating with a larger fork - one that held 20 percent more food—at an Italian restaurant ate about 10 percent less than those who used a regular fork. Researchers believe a smaller fork makes us feel we aren’t making as much of a dent on our plate so we’ll take more forkfuls to satisfy our hunger. (Note: This only worked with large portions. When diners were served smaller meals, fork size didn’t affect their consumption). So next time you’re order a super-sized entree, ask for a bigger fork to help you eat less. And while you’re at it, stop when you’re satisfied—not stuffed.

According to a new Cornell University study, people who ate smaller, portion-controlled lunches consumed about 250 calories less per day (that’s about two pounds a month) than those who ate as much as they wanted. Portion control doesn’t mean you’ll go hungry. Reward yourself with a snack for sticking to smaller meals, which can help shave off pounds without major sacrifice.
The ketogenic diet is legit. It’s not a fad or a trend despite what Instagram hashtags may lead you to believe. And you know what? It’s not a vanity thing either. Yes, you’ll shed massive amounts of weight so you can fit into those jeans you can’t even look at right now, but the keto diet also improves your health. Studies have proven that the ketogenic diet reduces factors for diabetes, heart disease, stroke, Alzheimer’s, and epilepsy. Which makes perfect sense since it was developed for children with epilepsy in 1921. I’m passionate about the keto lifestyle because I lost over 90 pounds on the keto diet.

While grains and legumes are not allowed on keto, low-carb vegetables definitely are. You need to eat at least 3 servings of vegetables a day to meet your daily needs for vitamins, minerals, and fiber. Vegetables are also rich in health-benefiting phytochemicals that research shows reduce your risk of heart attack, cancer, and cognitive decline [6]. Examples of low-carb vegetables are:

Zucchini noodes (zoodles!) are a bit of a staple on the keto diet, when I first started cutting out carbs pasta was one of the biggest thing’s I missed. Pre-keto I would love making pasta as a quick and easy weeknight dinner, but actually the zucchini version is so much better, with more flavour and quicker too. This dish can be put together in under 10 minutes!
Just like on a standard keto diet, the key is to trade in your starchy veggies for low-carb vegetarian options and also be sure to get in a hearty dose of healthy fats and protein. By cutting down on your intake of carbohydrates, your body is forced to start burning up fats to use for fuel instead of sugar, putting you into a metabolic state known as ketosis and allowing the health benefits to start racking up.
In the first week you lose a lot of water weight.  That is why you lose so much so fast.  I went off the diet and gained 7lbs over night...all water weight.  They say a good rule of thumb is to take what your weight lose is the first 5 days and add that to your weight...this will be your weight if you go off of the diet.  I lost 25lbs in a month.
