I am brand new to this concept! I just downloaded the app and transferred the vegetarian 2-week plan into my app settings. (Great app btw!). I noticed that the net carbs are really low. For example, day one is 10.3 for the day. I set a goal of ~20 based on what I am learning from app. Should I be concerned? Confused about a lot of the popular vegetarian options like tofu (which I love despite not -yet- being a vegetarian) and tempeh or seitan all of which are highly processed foods. One of the arguments in this article recommends staying away from highly processed foods. How do these processed foods make the cut then? Not trying to be snarky. Actually want to know.
“A completely vegan or plant-based keto diet would require the elimination of all animal-derived foods (including all meat, fish, dairy, eggs, and other animal fats and products, like bone broth or butter), plus nearly all sources of carbohydrates,” explains Josh Axe, D.N.M., D.C., C.N.S., doctor of natural medicine, chiropractor, clinical nutritionist, and author. “This results in a limited diet that’s going to be hard to follow and [will be] repetitive.”
If you’re already a keto eater used to animal products, the list below will give you ideas on how to switch to zero-cruelty food options while keeping carbs low. When it comes to buying keto-friendly vegan dairy products, make sure you are not getting any extra added sugar, hidden carbs, or unhealthy ingredients like hydrogenated oils. Some of these products may also have “gums” in them like agar agar or guar gum. These compounds are used to make the product creamier, and they are safe for most people. However, some people may get gastrointestinal discomfort from eating them, so look out for gums when switching to vegan dairy products.
The Wisconsin native also struggled with health issues. In her early teens she was diagnosed with polycystic ovarian syndrome (PCOS) and sleep apnea. “It is extremely difficult to lose weight and maintain weight loss with PCOS,” says Stolfi, who hit her highest weight of 286 lbs. at age 18. “And the lack of good sleep caused me to be lethargic, which meant I didn’t have the energy to work out.”

That said, a recurring mistake among vegetarians who go keto is incorporating too many vegetable-based carbohydrates, without even realizing. You’ve got to be quite vigilant of all your carb and protein sources following a vegetarian keto diet meal plan, as most vegetarians tend to source their protein from foods like legumes and grains, which aren’t supported on the vegetarian keto diet. If you’re following a diet that’s strictly plant-based, then you’ll have to be even more mindful.
