Instead of Butter use Coconut Oil or Vegan Butter. Coconut oil has a slightly lower melting point than butter and the same smoke point as butter, which makes it a good butter replacement. If you are not a fan of the flavor of coconut oil, look for vegan butter in your local health food store. Make sure the vegan butter doesn’t contain any hydrogenated oils because these oils increase the risk of heart disease tremendously.
I’m getting a little bored with my food choices, so I’m going to have to get better about planning ahead and making more interesting food choices for myself.  WoMan cannot live on smoothies and salads alone. I mean, I can, but I don’t want to.  I really do love my smoothies, I just get hungry pretty quick, when I have them for breakfast.  I do love salad, but definitely can’t do them as a meal every day.

For those already following a vegan diet, it can be especially hard to adapt to a low carb, high-fat diet. But once you know a few good substitutions, and have some amazing new vegan keto recipes under your belt, it doesn’t have to be difficult to eat well on a vegan keto diet. I’ve compiled 20 of my favorite plant-based keto recipes below to give you a head start!
Meat is a cornerstone of the ketogenic diet, but that doesn’t mean the diet is off-limits for the vegetarian population. As the high-fat, low-carb approach has grown in popularity, many vegetarians have wanted in on the hype and have found a way to make it work for them, tweaking the typical keto diet menu and food list to fit within their meat-free lifestyles.

Preliminary studies have also linked the keto diet to certain diseases, including diabetes. A study published in September 2016 in the Journal of Obesity and Eating Disorders, for instance, found the presence of ketones in the blood can lower HbA1c levels, potentially by way of ketone bodies decreasing glucose metabolism, and benefit people with type 2 diabetes.

Don't shy away from a handful of processed foods if they help you meet your macros. Normally, you'll hear that excluding processed food is the way to go on keto. And while that is a wise thing to do, it can cause trouble when you adopt a more restricted version of the ketogenic diet. Adding TVP, trans-free margarine, and canned goods can be a convenient way to get all the nutrients you need on your vegetarian ketogenic diet as long as it's low-carb and rich in healthy fats.
This one's kind of sneaky and a little difficult too, depending on your current dietary preference. If you're vegetarian, it's likely that a large portion of your diet is attributed to grains and beans like quinoa, rice, and lentils. According to Smith, these foods contain too many carbohydrates and not enough protein to make them foundational foods for following a keto diet.
