I went on a vegan keto diet for about seven months last year. During that time I created quite a few recipes for the blog. I wanted to post a bunch of those Keto Vegan Recipes all in one place. That way those of you who have been on the diet for awhile as well as those of you who are starting a vegan keto diet for the New Year have a resource all in one place.

Many dieters think that being ‘good’ during the week gives them a license to let go on the weekends, but if you add it up, eating poorly and not exercising Friday to Sunday comes out to 12 days “off” a month! Instead of letting the days of the week influence your habits, focus on creating a healthy lifestyle that is sustainable all month long (with the occasional indulgence) for lasting weight loss.
You thought since you were dieting that you were already doing this, but nope. Far too often I have seen people make all their dinners and foods assuming that they need a plate full of sides of vegetables and colors and things like that. I don’t really think this is a great use of your calories or nutrients. While it is important to have a varied diet, you can survive without having asparagus as a side for your meal, only using pink Himalayan sea salt, or without squeezing fresh lime juice onto your fajitas. These small things add a pretty large amount to your shopping bill over the long term. Would it be ideal to have a highly diverse diet? Of course! If you have the means, go for it, but just be aware of your shopping expenses and how they might be adding up.
Making gluten free crackers is easy: substitute the wheat flour with almond flour and sunflower seed flower. You can buy almond flour almost everywhere now, but you will need to grind roasted and unsalted sunflower seeds in a coffee or spice grinder or use a food processor. The combination of the two gluten free nut flours gives the crackers a great consistency and the nutty roasted flavor of the sunflower seeds is so darn tasty.

Top Tip: Move more to stress less. "I've learned to exercise instead of eating when I'm stressed," Sarah says. "I've started walking two to three miles outside two to three times a week. The fresh air instantly puts me in a good mood, and I think of it as time to unplug. Now I put exercise on my to-do list just like any task—it's about committing to myself. My mom bought a Fitbit and aims for 10,000 steps per day."

It may be best for a keto dieter to get the majority of his/her protein from nuts, seeds, vegetables, and supplements and less from soy products, apart from the occasional slice of tofu.

Most people, upon switching off from keto, say they feel sick after eating carbs, even once they reach their goal weight. Don’t get down if you mess up, just get back on the horse.
Fasting may sound crazy, but it has its benefits. Intermittent fasting makes it easier to restrict your calories by limiting the amount of time you have to eat. This also makes it tough to over-eat at meals since you have less meals to get to your macros, which will greatly aid you in your weight loss journey. Fasting can help you enter ketosis sooner, especially if your fasting window is large. 

A challenge that you may face is keeping your carbohydrates below 30 grams per day because by nature, these plant-based protein products contain 2-10 grams of carb per serving. But these products are also higher in dietary fiber (aka low-digestible carbs) which has a reduced effect on blood glucose levels (Grabitske, 2008). This may give you a little more flexibility with the number of carbs you can eat while still maintaining ketosis (e.g. up to 50 grams per day), but this will require tracking to be sure.
Hi Martina, I'm an vegetarian who can afford to eat eggs. I've only recently started keto, but options are limited to eggs and salad. But in your recipes one ends up eating 5-6 eggs per day. While they're one of the few sources for protein and fat necessary for keto, aren't they unhealthy from cholesterol point of view especially since we're eating so many eggs, that too daily?
Eating keto foods while still enjoying your favorite dishes can be a big challenge especially if you're just starting a keto, low carb, or paleo lifestyle. Fear not! Committing to healthier eating doesn't mean that you need to miss out on an occasional chocolate chip cookie or your favorite holiday shortbread. It simply means that you need to find a new recipe!

I am a 59-year-old wife and mother of two grown children.  I love your idea of fixing a lot of meals ahead of time and then pulling one out, put it in the crockpot, and you have dinner when you get home.  I hate feeling rushed when I cook so Monday - Friday I use those crockpot meals and make enough that we have lunch the next day.  I take Sunday afternoon, fix up what I need for the week (I don't have a lot of freezer space so I do a week's worth at a time) and I'm done with it!  Saturdays I like to try new recipes from some of my cookbooks which I am finding I can freeze as well!  So you have shown me a whole new way to organize my time and still put a healthy meal on the table.  Thanks so much and I look forward to future blogs.

Simply combine 1 tablespoon of ground flax seed meal with 3 tablespoons of water and let sit at room temperature for a least 15 minutes. For every egg a recipe calls for, you will need to use this ratio, so if you need 3 eggs, use 3 tablespoons of flax meal and 9 tablespoons of water.

The labels of ‘vegan,’ ‘vegetarian,’ ‘keto,’ ‘gluten-free,’ and many others include a range of food choices that fit the standards of the diet but aren’t necessarily healthy,” she warns. This is especially true of processed foods that may carry these labels.

This was mentioned just recently, but deserves some more spotlight. Nut milks are great for vegetarian keto. Dairy milk is more carb-heavy than many drinks, and should not be your first choice if you’re going for milk due to the lactose. Nut milks are especially good if you’re trying to accomplish vegan keto. Just make sure to avoid the sweetened versions - they contain sugar!

The benefits of a low-carb keto diet are also hard to pass up. It's one of, if not the strongest weight loss diet through ketosis. Keto may also improve acne, brain health, and seizure frequency, improve heart health, and combat type 2 diabetes, as well as assist with a host of other conditions. Others that adhere to the keto diet also self-report other benefits:
In order to get into ketosis and remain there, limit your net carb intake to 20 grams per day. This means you’ll need to avoid many popular vegetarian protein sources, such as quinoa, buckwheat, legumes, and pulses. These foods are simply too high in carbs to be included on a ketogenic lifestyle. Also be sure to steer clear of milk and low fat dairy products, starchy vegetables, and fruits, other than perhaps a few berries.
To get an idea of what that entails, consider that an average-sized person who eats about 2,000 calories a day will need 100–200g protein daily (on the lower end for strict keto dieters, and on the higher side for those going the Mod Keto route). A three-quarter cup serving of sunflower seeds nets you 25–30g protein, but also costs you 10g of carbs. Almonds have a similar protein-to-carb ratio at 30g to 15g per cup. The key is to accumulate enough protein from vegan sources without letting your carbs creep up too high.
I ate five to nine servings of fruits and vegetables a day, cut out fried foods, and switched from eating refined carbohydrates like white bread to complex carbs like whole-wheat bread. I promised myself that after one year of living healthfully, I'd treat myself to fast-food fries (an old favorite), but I couldn't finish them.
